 The kids are back to school and the means its mine to find some healthy lunch options.  I pack them lunch from home because I like to know what is going into their lunch boxes. One of the things I always include is fresh fruit. Apples are one of my kid's favorite fruits, but they always complain that the pieces have turned brown by the time they sit down to eat their lunch.  It has been about two weeks since I completed my six month NutriSystem plan, but that doesn't mean that NutriSystem has left me high and dry. Now that I am back to eating regular food,  I have a new recipe book to help guide me. Most of my readers know that cooking is not my forte. I tend to burn water. I loved the NutriSystem program because it was fast and easy, and most of it could be made in the microwave. Hearty macaroni and cheese is an American favorite that families have been enjoying for years. It can be served as a tasty fall dish or something to warm up a cool spring evening. And, it's something you can nearly guarantee everyone will love, whether you're whipping it up for a family dinner or as a potluck dish.

Channel your inner child as you discover our top picks for the creamiest, most delicious macaroni and cheese recipe ever. But before you do that, you might want to consider these top-secret tips to make your macaroni extra special:

• For a tangy taste, drain the pasta and add a cup of porter or beer to the noodles. Let them soak for a few minutes before combining it with cheese.
  
  
• Add a dash of cinnamon to the cheese sauce. The mixture of different flavors will make for a nice surprise.
  
  
• Add a bit of Dijon or English mustard into the cheese mixture for extra “oomph.”
  
  
• For a bit of spice, add a diced up jalapeno pepper or pepper jack cheese to the mixture.

And now for a few delicious mac & cheese creations:

What's better than one type of cheese? Two kinds of cheese, of course! Delicious cheeses and milk combine in this dish to make a creamy sauce that's sure to knock your socks off. 

6 servings

2 Tbsp. butter or margarine
2 Tbsp. seasoned dry bread crumbs
¼ cup flour
¼ tsp. salt
2 cups fat-free milk
¼ lb. (4 oz.) cheese spread
1 pkg. (8 oz.) shredded fat-free cheddar cheese, divided
2 cups elbow macaroni, cooked, drained

Preheat oven to 350ºF.

Melt butter in large saucepan on low heat. Remove half of butter; mix with bread crumbs. Set aside.

Stir flour and salt into remaining butter in saucepan; cook and stir 1 min. Gradually stir in milk until well blended; cook and stir until thickened. Add cheese spread and 1-1/2 cups cheddar; cook until melted, stirring frequently. Stir in macaroni.

Spoon into 1-1/2-qt. casserole; top with remaining cheddar cheese and buttered crumbs.

Bake 20 min. or until heated through.

Refrigerate any leftovers.


Old-Fashioned Macaroni & Cheese

Make this the mac & cheese your kids will remember for years. You can go from prep to baked in less than an hour – and, this casserole-like dish is great for leftoversas well so you can enjoy it for days. 

6 servings

3 Tbsp. butter or margarine
2 Tbsp. flour
½ tsp. salt
2 cups milk
2 cups shredded sharp cheddar cheese, divided
1 pkg. (7 oz.) elbow macaroni (1-3/4 cups), cooked, drained

Preheat oven to 350°F.

Melt butter in large saucepan on low heat. Add flour and salt; mix well. Cook 2 minutes or until bubbly. Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Reduce heat to low; simmer 3 to 5 minutes or until thickened. Add 1-1/2 cups of the cheese; cook until melted, stirring constantly. Add macaroni; mix lightly.

Spoon into 1-1/2-quart casserole; sprinkle with remaining 1/2 cup cheese.

Bake 20 minutes or until heated through and cheese is bubbling.

Refrigerate any leftovers.


Divine Mac & Cheese

Make this divine mac & cheese in less than 30 minutes. If you're feeling brave, add some fresh veggies like broccoli or red peppers, or your favorite meat like tender chicken.

12 servings

1 pkg. (14 oz.) macaroni & cheese dinner
½ cup extra sharp cheddar cheese, cubed (1/2 inch)
¼ cup shredded cheddar cheese
¼ cup shredded mozzarella cheese
1 egg
½ cup milk
¼ tsp. black pepper

Preheat oven to 375ºF.

Prepare dinner as directed on package. Meanwhile, combine cubed and shredded cheeses; set aside. Beat egg, milk and pepper with wire whisk until well blended.

Spoon half of the prepared dinner into greased 2-qt. casserole dish; cover with half of the cheese mixture. Repeat layers. Drizzle evenly with egg mixture.

Bake 15 min. or until center is set and heated through.

Refrigerate any leftovers.

Getting Fit with NutriSysten My Last Week!

 

 So here and I at week 26 of the NutriSystem program. This was actually my last week on the program. I have officially wrapped up my diet plan and with results that are better than I would have imagined. I was 148 pounds when I started the program. That is the largest I have been in my life. Twenty six weeks later, I am down to 130 pounds. This is less than I weighed before I got pregnant, so I am definitely happy with the results. I am a little lazy when it comes to cooking. Must be why I married not one but two chefs in my life. Nonni's Biscotti Introduces Salted Caramel, Limone, and Biscotti Bites!

 When I was a little girl, there was an old Italian women who lived on our street. She was a real old world Italian, who wore the black veils of a widow.  So here and I at week 24 of my NutriSystem program. I am nearing the home stretch and very happy with the results! I was 148 pounds when I started the program. I am now down to 133, which is actually two pounds less then my pre-pregnancy weight. Despite my husband trying to sabotage me by adding chocolate mouse to the menu at our restaurant, I still managed to lose almost two pounds this past week! I am wearing by bikinis again, and all my old clothes that I've stubbornly clung to for three years finally fit me! These are results I can see every time I look in the mirror and I feel like my self confidence has really been restored.

Cadbury Ice Cream Bars High Tea MommyParty

With summer in full swing, its always nice to find tasty ways to cool down. This summer, my family and friends are enjoying Cadbury Ice Cream Bars on these hot blistering days. My family was lucky enough to be chosen as a host for a Cadbury Ice Cream High Tea, and it was a great way to introduce a fantastic product to all my friends and their children.

Out host set from MommyParties came complete with everything we needed to make our party a success. There were four boxes of ice cream bars, coupons to hand out to our guests, a tea set, and even authentic English style hats. I felt like the Queen herself was coming for a visit as we set up for the party, and when the girls and their mom's arrived, they were just as excited as everyone else. Our Thoughts

 For our review, we received several of the tasty varieties to try out including the Original, Sour Cream and Onion, Hot & Spicy Jalapeno and BBQ. Each one was a delicious treat. All of the chips were extra crispy. The chips are thin, yet sturdier than average. Very few of them were broken inside the bag. After eating a small bag, I noticed there was no grease on my fingers. And they taste amazing! Each one has just the right about of flavoring. They are the perfect compliment to a sandwich and you definitely won't be able to stop with just one. We received a whole bunch of small bags and between my husband and my kids, they were gone in just a few days.  I was lucky to have gotten a taste at all.

Getting Fit with NutriSystem Week 24 #NSNation

 

 

  It really blows my mind that its been twenty four weeks since I began the NutriSystem program. It seems like I just started the program a few weeks ago, and already I'm heading into my last month. This week, I didn't lose any weight, but I didn't gain any back either. So I am still at 135. This is the weight I was before I got pregnant so I'm not disappointed, but I would really love to get down to 125 if I can. With all the activities I'm involved with in the summer, plus lugging around a 27 pound baby, I thought my progress would be a little faster. But that's okay. The last ten pounds are always the hardest to lose, and I'm not giving up yet.  At least I'm back in my old pants and get wear a bathing suit on the beach without feeling self consciousness.

Getting Fit with NutriSystem Week #23 #NSNation

 

I am a little late on my post this week. This is mostly because my family and I have been on a mini vacation, even though we spent the time in our hometown. My mom was off work this week, and she was nice enough to watch the baby for me so that I could spend extra time with my older children. We were on the beach for hours at a time, on the boardwalk, at the water park, and a ton of other places.  I tried to take my NutriSystem food with me whenever possible, but it didn't always work out. So there was a lot of cheating this week. This lead to another little slip. I gained a pound back this week, so I'm back to 135. I really thought the exuberance of exercise would cancel about a few extra calories, but I guess not. Sometimes I don't think I'll ever reach my goal weight of 125. These last ten pounds are stubborn, but I know with the support of the NutriSystem team, I will eventually get there.

Summer Birthday Bash! A Candy Store Review & Giveaway

 

 

 

This weekend will be my son's tenth birthday, and we have a big party planned!
